From Greens Glorious Greens by Johann Albi and Catherine Walthers
Serves 3 to 4
Ingredients:
3/4 lb kale (about 6 cups), washed, stripped, and chopped (to save time you can tear the leaves with your hands into small pieces)
1 tbsp olive oil
1-2 tsp minced fresh garlic
1/2 cup chopped scallions, white and green parts
sea salt to taste
1 1/2 tbsp toasted sesame seeds (If you don’t like sesame seeds it still taste good without)
Directions:
1. Bring 2 cups water to boil in a large skillet that has a tight fitting lid. Add chopped kale and cook for about 5 minutes, stirring from time to time, until kale is tender. Remove cooked kale with slotted spoon to drain.
2. Rinse out and dry skillet, then use it to heat oil over medium-low heat. Add garlic and saute for about 1 minute. Stir in scallions and cook for another minute.
3. Add cooked kale and salt to taste and stir to combine. Cover and cook for 1-2 minutes until kale is hot.
4. Sprinkle with toasted sesame seeds if you like and serve.
